Hemma hos oss har kornen blivit en sj\u00e4lvklar del i vardagsmaten, och i takt med att flera ursprungliga spannm\u00e5lssorter har b\u00f6rjat odlas igen, har v\u00e5rt intresse bara vuxit. De h\u00e4r kornen \u00e4r b\u00e5de s\u00e5 fantastiskt goda och s\u00e5 v\u00e4rdefulla. Om man j\u00e4mf\u00f6r modernt vete med riktigt gamla ursorter som emmer eller dinkel (spelt) ser man att de gamla \u00e4r \u00f6verl\u00e4gsna p\u00e5 m\u00e5nga vis. Det moderna vetet ger visserligen ett l\u00e4ttbakat mj\u00f6l, men har tyv\u00e4rr mist m\u00e5nga av de goda egenskaperna som de m\u00e5ngtusen\u00e5riga sorterna har kvar. Den fantastiska smaken. Det suver\u00e4na n\u00e4ringsv\u00e4rdet. Det faktum att de \u00e4r helt naturliga. Urvete inneh\u00e5ller till exempel mer protein, B-vitaminer och sp\u00e5r\u00e4mnen \u00e4n modernt vete. Tv\u00e4rtom har exempelvis v\u00e5r husfavorit emmer l\u00e5nga stadiga str\u00e5n och djupare rotsystem \u00e4n modernt vete. De gamla sorterna n\u00e5r alla l\u00e4ngre ner i myllan, och det i sin tur g\u00f6r att de tar upp mer av mineraler och andra n\u00e4rings\u00e4mnen.<\/p>\n<p>Hemma i k\u00f6ket ger allt detta en sk\u00f6n k\u00e4nsla. Att \u00e4ta n\u00e5got som \u00e4r s\u00e5 gott, nyttigt och ursprungligt k\u00e4nns v\u00e4lg\u00f6rande. Smaken p\u00e5 m\u00e5nga av kornen \u00e4r h\u00e4rligt n\u00f6tig, och de ger trevligt tuggmots\u00e5nd i b\u00e5de sallader och andra r\u00e4tter. Hos oss blir det numera kornsallader i parti och minut. Det \u00e4r s\u00e5 tacksamt, g\u00e5r l\u00e4tt att variera och eftersom vi n\u00e4stan alltid har en laddning kokt emmer eller borstvete p\u00e5 lut i kylsk\u00e5pet g\u00e5r det kvickt att f\u00e5 till en m\u00e5ltid. Man tar bara fram lite av de kokta kornen medan man hackar och f\u00f6rbereder resten. Sedan kan det bli en sallad med lite pesto, rucola, avokado och smulad fetaost. Eller en superenkel vardagssallad med valn\u00f6tter, persilja och citron \u2026 Men vi lagar g\u00e4rna varma r\u00e4tter ocks\u00e5. Ofta ett snabbt fr\u00e4s med kokt emmer eller matdinkel, finhackad schalottenl\u00f6k och strimlad mangold, svartk\u00e5l eller spenat. Ner i fr\u00e4set \u00e5ker sedan vad som finns hemma; kanske en bit chorizo i skivor, eller rester av en lammstek eller kyckling. Ibland ocks\u00e5 en skv\u00e4tt gr\u00e4dde. Eller s\u00e5 f\u00e5r de fr\u00e4sta kornen (och bladgr\u00f6nt) samsas med kokta kik\u00e4rter eller linser, en aning curry och kokosmj\u00f6lk. Har man f\u00e4rdigkokta korn redo g\u00e5r det s\u00e5 l\u00e4tt att f\u00e5 till goda, vettiga och billiga m\u00e5ltider. Prova, ni som inte redan \u00e4r fr\u00e4lsta. Man blir f\u00f6rv\u00e5nad \u00f6ver hur fantastiskt goda s\u00e5 oansenliga sm\u00e5 s\u00e4deskorn kan vara.
